Easy Barbeque Meatloaf Recipe


I have been using this Barbeque Meatloaf Recipe for many years and it is always a hit. A friend told me that the original meatloaf recipe was shown years ago on the label of Hunt’s Tomato Sauce and that celebrity chef Paula Dean uses a similar recipe. Wherever the original recipe comes from, it is truly a delicious meatloaf. Through the years, I've adapted this Barbeque Meatloaf Recipe by adding ingredients that give more depth of flavor.




Barbeque Meatloaf

Serves 4

Ingredients

1 1/2 pounds extra lean ground beef
1 cup bread crumbs
1 medium diced onion
1 egg, lightly beaten
3/4 teaspoon salt
1/2 teaspoon pepper
2 tablespoons finely chopped parsley
1/4 teaspoon garlic powder
1/2 teaspoon Italian seasoning
1/2 teaspoon chili powder
1 (14 1/2-ounce) cans tomato sauce
3 tablespoons vinegar
3 tablespoons brown sugar
2 tablespoons Dijon mustard
2 tablespoons Worcestershire sauce

Directions

Preheat oven to 375 degrees F.

Mix together the beef, bread crumbs, onion, egg, parsley, garlic powder, chili powder salt, pepper,Italian seasoning and 1/4 cup of the tomato sauce. Form this mixture into a loaf and place it in a 9 x 12 baking pan. Stir together the remaining tomato sauce, vinegar, sugar, mustard, and Worcestershire. Pour this sauce over the meatloaf. Baste the meatloaf with the pan juices every 15-20 minutes. Total baking time is 1 hour. Let the Barbeque Meatloaf rest about 10 minutes prior to cutting.
