Black Bean Chili is Good for You and Tasty Too!

Black beans and extra lean ground turkey come together to create a delicious and healthy black bean chili . Black beans have such great nutritional value and protein which makes this a very healthy meal. This is one of those meals that is not only good for you but a good value on your pocket book too. Serve this with whole grain pita bread for a complete and nutritious meal.


Black Bean Chili

Serves 4-6

INGREDIENTS

1 pound extra lean ground turkey
1 medium onion, diced
1 red pepper, diced
4 cloves garlic, minced
1(29 ounce) can tomato sauce
2(15 ounce)diced tomatoes with
mild green chilies
1/2 cup water
3 tablespoons tomato paste
1 1/2 teaspoons cumin
3 teaspoons chili powder
1 tablespoon Mexican oregano
(or regular oregano)
1 tablespoon Italian seasoning
1 tablespoon Worchester sauce
1 tablespoon dried parsley
1/4 teaspoon ground sage
1/2 teaspoon thyme
3/4 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
1 teaspoon brown sugar
1/4 teaspoon chipotle powder
1/4 teaspoon cayenne pepper (optional)
2(14 ounce)cans black beans,
drained and rinsed
1/4 cup sliced green onions
1/4 cup chopped fresh cilantro

Fixings:

Low Fat Cheddar Cheese
Light Sour cream
Jarred jalapeno peppers
Hot sauce

DIRECTIONS

Sauté meat, onions, red pepper, and garlic until turkey is browned. Drain meat and return to pan.

Reduce the heat to low and add all of the remaining ingredients except the corn, beans, cilantro, green onions and fixings. Cook on stove top on low for 1 hour.

Add the beans and cook another 1/2 hour. Right before serving, stir in cilantro and green onions.

Serve chili in bowls. Add fixings as desired.
