Cheeseburger Meatloaf Muffins are perfect for a family dinner!
These
cheeseburger meatloaf muffins
are winners with all kids. You’ll have the taste of a burger but because of all the seasonings, the meat will be even more flavorful. I like the fact that this recipe cooks in half the time as a traditional meatloaf and that the addition of carrots adds great flavor and nutritional value. You’ll have lots of request for this meal!
Cheeseburger Meatloaf Muffins
Serves 4-6
INGREDIENTS
1 1/2 pounds lean ground beef
1 cup bread crumbs
2 garlic cloves, finely chopped
1 egg, lightly beaten
1/2 cup finely chopped carrot
1 tablespoon Worchester sauce
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
3/4 teaspoon salt
1/4 teaspoon pepper
1 cup ketchup (divided)
12 slices American cheese, cut to fit on top of muffins
DIRECTIONS
Preheat oven to 375 degrees F.
Mix together everything except the 1/2 cup of ketchup for the topping and the cheese. Spray a 12 cup muffin pan with non stick spray and fill with meat mixture. Use an ice cream scoop to get even amounts. Add remaining ketchup to each muffin top. Bake 20 minutes.
Top with cheese. Bake for another 10 minutes.
Leftovers fit perfectly in to a hot/cold thermos for lunch the next day.
