Simple yet Delicious Easy Taco Soup!
This
easy taco soup
is so simple yet so delicious. My family loves to garnish the soup with what ever I may have on hand. You can top the soup with shredded cheese, sour cream, avocados, green onions, tortilla or corn chips. One of the reasons this is such an easy soup is that if I have the ground beef made ahead, this comes together in no time.
Easy Taco Soup
Serves 6-8
INGREDIENTS
1 pound Mexican Ground Beef Mix

1 onion, chopped
1 (16 ounce) can chili or kidney beans, drained and rinsed
1 (15 ounce) can black beans, drained and rinsed
1 (15 ounce) can whole kernel corn, drained and rinsed
1 (8 ounce) can tomato sauce
1 (12 fluid ounce) can or bottle beer
2 (10 ounce) cans diced tomatoes with green chilies, undrained
1 1/2 teaspoon sugar
1/2 teaspoon cumin (optional)
2 tablespoons chopped fresh cilantro (optional)
TOPPINGS : CHOOSE YOUR FAVORITES
shredded cheddar cheese (optional)
sour cream (optional)
crushed tortilla chips or corn chips (optional)
sliced green onions (optional)
sliced avocado (optional)
DIRECTIONS
Prepare the
Seasoned Mexican Beef Mixture
. Click link for recipe.(If preparing this meat mixture ahead of time, store in the fridge for up to two days or in the freezer for up to 2 months until ready to use. Warm the meat on low in a pan on the stove top prior to using in this recipe)
Add to the beef mixture the chili beans, black beans, corn, tomato sauce, beer, diced tomatoes, sugar and cumin in to the beef mixture. Bring to a boil and then simmer on medium low for 30 mintues. Stir in the cilantro.
Serve in bowls topped with any or none of the following toppings: shredded cheese, sour cream, crushed tortilla chips, sliced green onions, avocado slices.
* Ground Turkey or Ground Chicken can be substituted for the ground beef in this recipe.
