INGREDIENTS

1 1/4 - 1 1/2 pounds lean ground beef
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon thyme (divided)
8 shallots, peeled and diced
1 clove garlic, diced
1 cup loosely packed arugula
1 teaspoon sugar
1 teaspoon red wine vinegar
Salt and pepper to taste
4 Kaiser roll, split
1 tablespoon extra virgin olive oil
1 tablespoon Dijon mustard
2 tablespoons canola oil (divided)
8 ounces goat cheese (divided in 4)

DIRECTIONS

Mix the ground meat, garlic powder, onion powder, salt and pepper together but do not overwork. Form in to 4 patties and place an indentation in the top center of each patty.

Heat a sauté pan to medium low heat and add 1 tablespoon canola oil. Add the shallots and thyme and allow to shallots to soften over about 15 minutes. Reduce heat if the shallots begin to brown. Add the diced garlic, sugar and vinegar and cook for another 3-4 minutes. Mix in the arugula and add a pinch of salt and black pepper to taste. Remove shallot mixture and set aside.

Drizzle olive oil onto inside top of Kaiser rolls. Spread Dijon mustard to inside bottom of Kaiser rolls. Lightly brown the Kaiser rolls in the oven.

Heat the frying pan to medium high and add 1 tablespoon canola oil. Place burgers on grill and cook 3-4 minutes on first side. Flip and cook another 3 minutes until medium rare or desired doneness.

Place burger in Kaiser rolls. Top with goat cheese and shallot mixture.
