Ground Beef Stew
recipe is so easy to make, it can be made anytime of the week. Serve this beef stew over pre-packaged or instant mashed potato for a meal that can be made in less than 30 minutes
Quick Ground Beef Stew over Instant Mashed Potatoes
Serves 4
INGREDIENTS
1 pound Seasoned Ground Beef Mix

2 cups frozen mixed vegetables
1 1/2 tablespoons tomato paste
1 package dry beef gravy mix
3/4 cup water
1/8 teaspoon black pepper
1 bay leaf
1/4 teaspoon dried thyme
1/2 teaspoon dried Italian seasoning
1 tablespoon fresh parsley (chopped)
Prepared or instant mashed potatoes
for (4) servings
DIRECTIONS
Prepare the

Prepare the gravy mix according to the directions on the package and add the tomato paste. Stir the gravy mix into the ground beef. Add the water bay leaf, thyme, and pepper..
Heat to boiling and reduce to simmer for 5-7 minutes or until vegetables are tender. Stir occasionally. Remove bay leaf.
Cook the instant mashed potatoes or heat the pre-packaged mashed potatoes.
Serve the ground beef stew over packaged Mashed Potatoes. Top with chopped fresh parsley.
