This Ground Turkey Recipe for a make ahead casserole is easy, comforting and flavorful. This is popular meal with my family and at potluck meals. I rely on a basic ground turkey recipe for browing the meat and then add all of the other remaining ingredients to create this one dish meal.
1 pound seasoned ground turkey mix

1 jar favorite spaghetti sauce
1 can (14 1/2 ounces) diced tomatoes,
undrained
1 can (6 ounces) tomato paste
1 teaspoon white sugar
1 pound package elbow macaroni
2 eggs, beaten
1/4 cup olive oil
2 cans (4 ounces each) sliced mushrooms
2 cups mozzarella cheese (divided)
2 tablespoons parmesan cheese
1/4 cup chopped parsley
1 cup seasoned breadcrumbs
Pinch salt and black pepper
DIRECTIONS
Pre heat oven to 350 degrees.
Cook macaroni according to package directions and drain. Add to the pasta the eggs, olive oil, mushroom, half the mozzarella, paremesaan cheese, parsly, breadcrumbs and a pinch of salt and pepper.
Spray 9 x 13 pan with non stick spray and spoon in the macaroni mixture.

Add to the meat mixture the spaghetti sauce, diced tomatoes, tomato paste and sugar. Simmer on low for 10 minutes.
Top macaroni with meat mixture. Top with remaining mozzarella cheese.
Bake for 30 minutes or until cheese is bubbly. Let sit 10 minutes prior to serving.
