Healthy Turkey Chili that Taste Great and is Good For You too!
This
healthy turkey chili
is one of my favorite dinners to serve to my family. It is very hearty but I know that I am serving a low fat and healthy meal. There is lots of nutritional value in this chili just by adding in more beans and vegetables. Kids really enjoy this turkey chili too because they enjoy the sweetness added by the corn and the carrots. Serve this with whole grain bread for a complete and nutritious meal. Double this recipe and serve the turkey chili leftovers the next day over a bowl of greens for a healthy and quick taco salad or over brown rice as another healthy dinner option. The flavors are great and no one but you will know how healthy this meal is.
Healthiest Turkey Chili
Serves 4-6
INGREDIENTS
1 pound lean ground turkey
1 medium onion, diced
1 red pepper, diced
1/2 green pepper, diced
4 cloves garlic, minced
1/2 cup shredded carrot
1 (29 ounce) can tomato sauce
1 (15 ounce) diced tomatoes with mild green chilies
1/2 cup water
3 tablespoons tomato paste
1 1/2 teaspoons cumin
1/4 teaspoon ground sage
3 teaspoons chili powder
1 tablespoon Mexican oregano (or regular)
1 tablespoon Worchester sauce
1 tablespoon dried parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1 teaspoon paprika
1/4 teaspoon coriander
1/4 teaspoon cinnamon
1/8 teaspoon chipotle powder (optional)
1 (14 ounce) can corn, drained and rinsed
1 (14 ounce) can black beans, drained and rinsed
1 (14 ounce) can red kidney beans, drained and rinsed
Fixings (Optional):
Sliced green onions
Chopped cilantro
Low Fat Cheddar Cheese
Light Sour cream
Jarred Jalapeno peppers
Hot sauce
DIRECTIONS
Sauté meat, onions, diced peppers, carrots until meat is browned and vegetables soft. Drain meat and return to pan.
Reduce the heat to low and add all of the remaining ingredients except the corn and beans. Cook on stove top on low for 1 hour.
Add the corn and beans and cook another 1/2 hour.
Serve chili in bowls. Add fixings as desired.
