Delicious but Super Healthy Turkey Meatloaf Recipe!
This is an amazing alternative to a traditional meatloaf. This
healthy turkey meatloaf
includes whole grain bread, red pepper, carrots and spinach which add great taste, texture and a whole lot of nutrients. My kids love this turkey meatloaf and I love how good it is for them. My kids always ask for the meatloaf leftovers as lunch box sandwiches the next day. This healthy turkey meatloaf recipe is sure to become a family favorite!
Healthy Turkey Meatloaf
Serves 4-5
INGREDIENTS
1 1/4- 1 1/2 pounds extra lean ground turkey
2 slices (approx. 2 cups) whole grain bread, broken to tiny pieces
1 small onion, diced
1 small red pepper, diced
1/2 cup finely chopped carrots
(1) 10 ounce package frozen spinach, thawed and squeeze dried
1 egg and 1 egg white, lightly beaten
1 tablespoon Worcestershire sauce
1 tablespoon wine vinegar
1 tablespoon Italian seasoning
1/2 teaspoon garlic powder
1/4 cup finely chopped parsley
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup chili sauce
DIRECTIONS
Preheat oven to 375 degrees F.
Mix together everything except the chili sauce. Spray a loaf pan with non stick spray and fill with meat mixture. Pour the chili sauce over the meatloaf. Bake for 1 hour. Let rest 10 minutes prior to cutting.
For a great packed lunch the next day, make meatloaf sandwiches. Using leftover meatloaf, place between two slices of whole grain bread, top with romaine leaves and 2 tomato slices. If you are making sandwiches for immediate consumption, slice avocado and add in sandwiches for additional nutritional benefits and great nutty flavor.
