Cheesy Beef and Spinach Manicotti
Serves 6
1 pound Seasoned Ground Beef Mix

14 (8-ounce package) manicotti
1 (15-ounce) container ricotta
3 cups shredded mozzarella
1 cup grated Parmesan Cheese (divided)
Salt and freshly ground black pepper
to taste
1 (10 1/2 ounce) frozen spinach,
squeeze dried
4 1/2 cups favorite spaghetti sauce
sauce ( 1 1/2 jars )
Salt and freshly ground black pepper
to taste
2 tablespoons butter, cut into pieces
(good but optional)
DIRECTIONS
Boil Manicotti for about 4-5 minutes, which will leave the manicotti al dente.
Preheat the oven to 350 degrees F.
Prepare
Seasoned Ground Beef Mix
. (Click link for recipe) Allow meat to cool slightly. (If frozen, defrost and warm slightly prior to mixing with cheese mixture)Mix in the spinach and 1/2 cup spaghetti sauce.
Mix the ricotta, 1 1/2 cups mozzarella cheese and 1/2 cup Parmesan. Add salt and pepper to taste, and mix. Stir the cooled meat mixture into the cheese mixture.
Preheat the oven to 350 degrees F. Spray inside of 13” x 9” casserole pan with non stick spray. Spoon 1 cup of the marinara sauce over the bottom of the prepared dish. Fill the manicotti with the cheese meat mixture. Arrange the stuffed pasta in a single layer in the prepared dish and spoon the remaining sauce over.
Sprinkle the remaining 1 1/2 cups of mozzarella cheese, then the remaining 1/2 cup of Parmesan over the stuffed pasta. Dot entire dish with the butter pieces. (Optional) Bake the manicotti uncovered until heated through and the sauce bubbles on the sides of the dish, about 30 to 35 minutes. Let the manicotti rest 10 minutes before serving.
