Incredibly Easy and Delicious Mexican Cheeseburger Pie!


I came up with this recipe for Mexican Cheeseburger Pie because one day my kids asked me to make Cheeseburger Pie but the only ready to use ground beef mix that I had in the freezer was my Mexican Ground Beef Mix. I defrosted the mexican meat mix and altered my Easy Cheeseburger Pie recipe to come up with this new Mexican inspired ground beef caserole. I have made this for company too and my friends were amazed at how a simple twist to an easy classic recipe changed this to a new and exciting Mexican meal.




Mexican Cheeseburger Pie

Serves 4

INGREDIENTS

1 pound Mexican Ground Beef Mix

1 ready made refrigerated pie crust
1/2 teaspoon oregano
1 teaspoon Worchester sauce
1/2 cup dry bread crumbs
3/4 cup petite diced tomatoes with green chilies
1 tablespoon freshly chopped cilantro
1/2 cup black beans, drained and rinsed
Cheese topping (see below)

Cheese Topping

INGREDIENTS

1 egg
1/4 cup milk
1/4 teaspoon salt
1/2 teaspoon Worchester sauce
1/2 teaspoon Dijon mustard
2 cups shredded mexican cheese blend
1 hass avocado

DIRECTIONS

Preheat oven to 375 degrees F.

Spray pie pan with non stick spray and form pie crust on to the pie pan.

Prepare the Mexican Ground Beef . Click link for recipe. (If preparing this meat mixture ahead of time, store in the fridge for up to two days or in the freezer for up to 2 months until ready to use. Warm the meat on low in either the microwave or stove top prior to using in this recipe)

Add the oregano, bread crumbs, Worchester sauce, tomato sauce and beans and cook in a skillet over medium heat for approximately 10 minutes. Add cilantro. Pour beef mixture in to the pie crust.

Mix all of the ingredients for the cheese topping except the avocado and add to the top of the beef mix.

Bake for approximately 30 minutes.

Peel and cut avocado in to 8 slices. Serve mexican cheeseburger pie topped with wedges of avocado.

* Mexican Ground Turkey Mix can be substituted for the Mexican Ground Beef Mix.
