Southwestern Beef Chili with BIG Flavor!!!

Find all the flavors of the Southwest in this Southwestern Beef Chili Recipe. Ingredients such as ancho chili powder, chipotle powder, cumin, black beans and cilantro are added to bring out the unique taste of the southwest. You can add additional chipotle powder for additional smoky flavor if you don't mind the heat. This easy beef chili has bold flavors that will satisfy the strongest comfort food craving.

Southwestern Chipotle Beef Chili

Serves 6-8

INGREDIENTS

2 pounds lean ground beef
1 medium onion, diced
1 green pepper, diced
4 jalapenos, seeded and chopped
4 cloves garlic, minced
1(29 ounce) can tomato sauce
2(29 ounce) cans diced tomatoes
1 cup water
1 (6 ounce) can tomato paste
2 teaspoons cumin
4 teaspoons chili powder
1/2 teaspoon ancho chili powder
2 teaspoons paprika
1 teaspoon chipotle powder
2 tablespoons Mexican oregano (or regular)
2 tablespoons Worchester sauce
2 tablespoon dried parsley
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon brown sugar
1/4 teaspoon coriander
1/4 teaspoon cayenne pepper (optional)
1(14 ounce) black beans, drained and rinsed
1(14 ounce) can white corn, drained and rinsed
1/4 cup chopped fresh cilantro
1/2 cup sliced green onions
Juice from 1/2 lime
1 cup crumbled cotija cheese
1 hass avocado

Fixings(Optional:

Sour cream
Hot sauce

DIRECTIONS

Sauté the meat, onions, green pepper, and garlic until meat is browned and vegetables soft. Drain meat and return to pan.

Reduce the heat to low and add all of the remaining ingredients except the beans, avocado, cotijo cheese and fixings. Cook on stove top on low for 1 hour.

Add the beans and corn and cook another 1/2 hour. Right before serving, stir in green onions and cilantro.

Serve chili in bowls. Peel avocado and cut in to chunks. Top with cotijo cheese. Spoon over chili. Top with cotijo cheese. Add fixings as desired.
