This Stuffed Green Pepper Soup has all the flavors of a stuffed pepper!

This stuffed green pepper soup is really good any time of the year. I love the addition of the cheese at the top and as you dig in to this soup, you start finding all of the ingredients found in a stuffed green pepper.


Stuffed Green Pepper Soup

Serves 6-8

INGREDIENTS

1 pound Italian Ground Beef Mixture

1 ( 29 ounce) can diced tomato
1 (15ounce) can tomato sauce
1 (10 ounce) can beef stock
1 tablespoon oregano
black pepper to taste
5 teaspoons freshly topped parsley
1 cup cooked white rice
Shredded cheddar cheese

DIRECTIONS

Prepare the Italian Ground Beef Mixture . Click link for recipe.(If preparing this meat mixture ahead of time, store in the fridge for up to two days or in the freezer for up to 2 months until ready to use. Warm the meat on low in a pan on the stove top prior to using in this recipe)

Add the remaining ingredients except for the rice and cheese. Bring to a boil and then simmer on low for about 30 minutes.

Stir in the cooked rice and simmer another 5 mintes.

Serve soup in bowls. Sprinkle cheddar cheese on top of soup bowls.

* This stuffed pepper soup can be made with ground turkey or ground chicken.
