Taco Ground Beef Mixture for use in Classic and Unique Mexican Dishes!


I use this taco ground beef mixture in many of my Mexican inspired recipes. I often prepare 3 pounds of beef so that I have three family sized portions to use in recipes calling for a 1 pound Mexican Ground Beef . Store the remaining 2 portions in individual freezer bags for use on another day. Save time and money by preparing 3 pounds of ground beef.





I prefer adding my own spices to create this Mexican Beef Mixture rather than adding packaged taco seasoning to ground beef because this version has MUCH less sodium and has GREAT flavor. If you are stressed for time or just prefer packaged taco seasoning, you can eliminate all of the ingredients from the chili powder on and follow the directions for the taco seasoning. (For best flavor, include the onion, green pepper and cilantro)

3 Pound Mexican Ground Beef Mix

Serving Size: Makes (3) 1 pound Mexican Ground Beef Mixes

INGREDIENTS

3 pounds lean ground beef (at least 80%)
1 large diced onion
1 large diced green pepper
1/4 cup fresh cilantro finely chopped
3 teaspoons chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon dried oregano
1 1/2 teaspoons paprika
1 tablespoon dried parsley
2 1/4 teaspoons ground cumin
2 teaspoons salt
3/4 teaspoon black pepper
2- 2 1/2 cups water
1/4 cup fresh cilantro finely chopped

DIRECTIONS

In a Dutch oven or large skillet, saute the ground beef, onions and green pepper over medium high heat. Stir frequently to brown all side of the meat until thoroughly cooked.

Drain the ground beef in a colander. Return the meat to the stove and reduce the heat to medium low. Stir in the water and spices mix except for the cilantro and simmer for another 5 minutes. Stir in the cilantro and turn off the heat.

Use one third of this beef in any recipe calling for 1 pound Mexican Ground Beef Mix.

The remaining two thirds of the ground beef should be separated in half and each stored in a plastic freezer bag. Label and store no more than two months. The frozen ground beef mix can be defrosted overnight in the refrigerator or defrosted using the defrost setting on the microwave.
