This Turkey Cranberry Burger Recipe is Over the Top!!!
This Turkey Cranberry Burger has a great combination of flavors from th turkey, goat cheese, apples and cranberry. Enjoy this one anytime of the year. I buy lots of bags of fresh cranberries at Thanksgiving and freeze them for use during the year because fresh cranberries are almost impossible to find after the Christmas.
Goat Cheese & Turkey Cranberry Burger
Serves 4
INGREDIENTS
1/4 cup thinly sliced leeks
1/4 cup finely chopped celery
1 Granny Smith apples, peeled and diced
1 tablespoon canola oil
1 1/2 - 2 pounds ground turkey breast
1 tablespoon salt
1/2 teaspoon black pepper
1/2 teaspoon ground sage
1/4 teaspoon ancho chili powder
1/2 lemon, juiced
1/4 cup parsley, finely chopped
4 Kaiser rolls, split open
8 ounces goat cheese (divided in 4)
Cranberry Chutney (recipe follows)
DIRECTIONS
Sauté the leeks, celery and apples in the canola oil until tender. Let cool.
Place the ground turkey in a large mixing bowl. Add sautéed items and the remaining ingredients except rolls and chutney. Shape into 4 burgers and place indentation in center of burger. Allow to sit in the refrigerator at least an hour prior to cooking.
Preheat grill to medium high heat. Place burgers on grill and cook each side for 7 minutes or until meat is thoroughly cooked. Lower heat if necessary.
Heat Kaiser rolls on grill for about 1 minutes (open face down)
Place burger in Kaiser roll. Top burger with goat cheese and then cranberry chutney.
Cranberry Chutney
1 1/2 cups fresh cranberries (6 ounces)
1/2 cup water
1/2 cup sugar
1/2 cup Anjou pear, diced
1/8 teaspoon cinnamon
1/8 teaspoon ground cloves
1/8 teaspoon allspice
1/8 teaspoon ginger
1 tablespoon red wine vinegar
1/8 cup chopped walnuts
Directions
In saucepan, bring water and sugar to boiling. Lower heat to medium low and add the all of the other ingredients. Cook for 15 minutes. Allow cranberry chutney to cool prior to placing in the refrigerator. Can be made 1 day ahead.
